This technique results in minimal shrinkage, a rapid drying process, and effectively prevents oxidation browning. The final product features light-colored sepals with high transparency and excellent rehydration properties. After just 2 minutes of rehydration, the sepals become crisp and are rich in musk-like fragrance and aroma. The optimal drying conditions include preheating for 3 minutes, followed by a drying temperature of 90°C with a relative humidity of 20%. A pre-drying phase at 90°C and 60% humidity is then applied for 20 minutes. Finally, a late drying stage at 50°C with 20% humidity for 10 minutes ensures the best quality outcome. This structured approach not only preserves the structural integrity of the sepals but also enhances their sensory attributes, making them ideal for various applications where texture and aroma are key factors.
